My wife is a firm believer in “fat is bad for you” and cuts all the fat off her bacon or steak. She’s somewhat horrified when I order pork belly in a restaurant because for me “fat is where the flavour is”. She has passed her attitude on to our daughters.
Every time we’re staying in a hotel, she and the girls have this pile of cut off rinds and bits of bacon that are anywhere close to a bit of fat. It takes all my self control not to lunge across the table, grab those glorious crispy bits and stuff them in my mouth.
To be honest, they don’t even have to be crispy. When we were growing up, my sister and I would call rubbery bacon rinds “worms” and delight in lowering them into our gobs and chewing.’
