Invariably called something like ‘dirty mac’ or ‘piggy smalls’, served on something that is not a conventional plate with a knife going through it, by a man with a baseball cap, beard, and sleeve tattoo. Probably canteen style tables and chips not included (!). The bread of choice was always brioche, which always disintegrated when you tried to pick it up.’
